Trofie is a traditional pasta variety native of Liguria (also where Pesto was first created) in Northwest Italy yet renowned and enjoyed all around Italy. This pasta is around 5cm long, thick twisted strands that remain quite chewy when cooked.
Trofie pasta produced by Spighe Molisane are crafted using selected durum wheat semolina from the top Italian countryside. Since they are very hard it is advisable to cook them 5 minutes longer than the cooking time on the packaging to have better results!
